Chicken and Gravy

Oh, man. My big sister is sick, y’all! You know what she needs? Something good to eat. Here’s what Dr. Baby Sister recommends:

Chicken and Gravy

1 lb. boneless, skinless chicken breasts
1 onion, diced
About 7 or 8 carrots, peeled and sliced
3 or 4 stalks of celery, diced
2 cans of cream of chicken soup
1 1/3 cup of water
½ cup chicken broth

Get your slow cooker out, please, and place it on the counter. It’s that kind of meal. Put your onion, carrots, and celery in the bottom. Put your chicken in (no, don’t cut it up). Sprinkle your salt and pepper on there (and Tony’s!). Mix the soup, water, and broth together in a separate bowl until it’s combined and then pour it on top of the chicken. Cook that on low for about 7 hours, or until the chicken just falls apart. Sop it up with some frozen biscuits – we’re not getting’ fancy here.

  1. oh, thank you! how did you know i was just thinking "i need something warm and chickeny, maybe with rice"?

    today i have managed to eat one whole bagel (spaced out throughout the day), a couple strawberries and a handful of teddy grahams. that's an improvement, i'll be back before you know it.

    i think i have all of these ingredients and might set it up in the crock pot tomorrow, we'll see.

    I feel like I need to investe in a slow cooker. And maybe also a rice cooker. And maybe also anytype of thing where I put food in and it's magically cooked without me doing much besides turning it on...

  3. well, this sounded so good to me that i just made a pan version of it tonight. i browned the chicken in a little oil, took it out, made a roux with some butter/flour, threw in some onions, then poured in some chicken broth. ta da. short notice (i didn't have some of the ingredients after all). it would be perfect except that i put too much salt and pepper AGAIN, what is it with me? i shouldn't cook when i don't feel good, i always screw the seasonings up because i don't feel like tasting. :P

  5. you can probably leave the celery out - i leave it out of a LOT of recipes (because i don't like celery, and you'd be surprised how many call for it) and it's always turned out fine.

    it does add a little flavor, but mostly it just seems to give some weight and texture to dishes. it's kind of like a vegetable thickening agent.
