what's for breakfast, sister?

Breakfast Quiche!

4 eggs
1 cup milk
2 tbs flour
2 tbs butter
1 lb. breakfast sausage
8 oz. shredded cheddar
1 small onion (or 1/2 large onion), chopped
2 frozen pie crusts

Chop up your onion. Melt the butter in a pan and cook the onion until translucent. Add in the sausage and cook it with the onion until it's brown. Drain the meat and onion well.

In a medium bowl, mix the cheese and flour together (I think this is called dredging, and it makes the cheese melt better and not get oily when you bake it?). In a separate, larger bowl, beat the eggs and add milk. Season them up however you like your eggs - I just salt, pepper and Tony's them some.

Add the cheese mixture and sausage/onions into the big bowl and stir everything together well. Preheat the oven to 350, and pour the quiche mixture into the pie crusts. I think the pie crusts should be defrosted before you do that. And I always put my pie tins on a large cookie sheet to catch any drips.

Bake at 350 for 45 min. to an hour, or until they're cooked through and browned to your liking.

This makes two pies, so you can eat one this morning, and one tomorrow morning! Or just pick at them all day like we do, and you don't have to cook lunch.

    sorry i haven't updated, we have only been eating out/frozen, stuff like that. urgh.

    i think i'm just going to post a recipe tonight that i didn't cook tonight? fair?

  2. oh, totally. i might do the same with any i find that i'm really excited about trying (someday, when i have more tiiime.)

    we've had that kind of weekend, too. we went to ihop for lunch today and tonight will be choose-your-own-leftovers so i don't have to throw any food out.
