Mom makes the best meatloaf. I got her recipe!
2 - 2 1/2 lbs. ground beef
1 egg
2 small (or 1 large) can tomato sauce (mix half with everything, SAVE HALF for later)
chopped onion
chopped bell pepper
1 - 1 1/2 cups seasoned breadcrumbs (Italian style, i guess, that's what i have)
salt, pepper, Tony's
SQUISH EVERYTHING TOGETHER IN A BIG, BIG BOWL. There is nothing like cracking a raw egg over some ground beef to make you feel like a real woman. Knead it around and mix it with your disgusting hands until it's a big ball. Name it "Meatwad," and laugh to yourself because that is hilarious. Pretend it's singing to you. Hee hee. Hee.
Form it into whatever size loaf you want, in whatever size pan you have. I have a square baking dish it fits perfectly in. I just flatten it out in there and have a deep-dish square meatloaf.
Bake it at 375 for 1 - 1 1/2 hours. 15 minutes before it's done, take it out, and pour that second can of tomato sauce all over it. Apologize to Meatwad for making him so delicious that you will have to eat him soon. He'll probably tell you it's cool, he gets it.
Serve with mashed potatoes, peas and corn. Mix the peas and corn into the mashed potatoes to try to get your kid to eat them. It may not work. He's totally on to the whole vegetable thing. Man.
oooh i never knew how to do this! how did you get mom to get you an actual recipe instead of just "a pinch" of this and "some" of that? jeebus, you are my hero.
ReplyDeletealso - today was SO BUSY. just got online. i hope to update tomorrow about my take on your quiche aaand i made the pasta again. so.
the trick is to have a pen and paper with you while you talk to her. and say things like "okay, how MUCH tomato sauce?"
ReplyDeletebtw curt rejected the WHOLE MEAL. there was green stuff in everything. shayne, who hates bell pepper, did not even notice there was some in the meatloaf - but curt found it immediately. NO GREEN STUFF, MOM.
i would also like to add, next time i make this i'm going to half the recipe. i ALWAYS make too much meatloaf for 2 people to eat. less meatloaf is more, i think, at least for now.
